Rendang pulao

I made beef rendang few days back, it was still left over in the fridge. We started get bored to eat. I got an idea to prepare simple pulao with the left over rendang. Amazing just need couple minute you can prepare easy dinner, finally my rendang has over now :D Serve with cucumber and lettuce salad, yum!

-cook basmati rice 2 cup
-beef rendang, slice the beef into small cubes
-ghee 2 tsp or you can use oil
-onion 1 big size, chopped
-1 tsp chili powder
-salt as required

Heat oil in the pan then fry onioon until brown and stir well. Add rendang slices and chili powder. Stir for 5 min until onion and rendang mixed well. add rice and seasoning with salt, be careful added salt since rendang already have salt.
serve hot.

Vegetables pulao

One of our choice if we were obstaining eating meat, very simple to prepare and rich in flavour :) Its famous dish from North Indian, was enough to enjoyed with yogurt raiata and papadam without accompanied with other side dish ;)

1 cup uncooked Rice
1 Onion (chopped)
1 tsp Ginger garlic paste
1 black Cardamom (coarsely ground)
2 Cloves
1 Cinnamon stick (small)
5 whole Black Pepper
1 Bay leaf
1 tsp Cumin seeds
1/2 tsp Red chilli powder
Mix Vegetables (carrot, beans, cauliflower, etc) i used frozhen
1½ tsp garam Masala powder
salt to taste
oil or ghee


Wash and soak rice for 15-20 minutes.
Heat oil in a cooker. Add cumin seeds, cinnamon stick and bay leaf. When it starts to crackle then add black cardamom, cloves and black pepper. Cook for 20 seconds.
Add chopped onion and ginger garlic paste and fry for couple of minutes or till light brown.
Add the cut vegetables
Add garam masala powder and red chilli powder. Mix well and cook for 2 minutes(little water can be added if required)
Add drained rice and fry for 2 minutes. Add water and salt. Mix well and close the lid of the cooker.
Cook till done.
serve hot with yogurt raita and papadam

Nasi goreng teri



Another version of Indonesian fried rice, its accompanion with small dried fish and egg. Nasi goreng in Indonesian known as breakfast dish, everybody prepared nasi goreng from left over rice at night. Just simple nasi goreng only adding egg as accompanion but nowadays there was so many ingiderents we can add on nasi goreng. Dried fish was familiar in Indonesia, made from any type of fish and fermented with salt and dry it in the sun for few days. Just before used u have to fried them with oil and drained.

Recipe:

2 plate cooked rice ( i used basmati rice), fried dry fish 50 gr, egg 2, onion 1 big size chopped, garlic 3 chopped, chili paste 2 tsp, soya sauce 2 spoon, salt and papper as required, spring onion for sprinkle

Heat oil in the pan the saute garlic and onion until fragrant then add chili paste for 1 min. Add egg then mix together until egg get cooked. Add rice and all the seasoning and stir frequenly. After all add fish fried and sprinkle with spring onion. Serve hot

Kabsa (Chicken and Rice)


As Indonesian i loved to ate rice, actually not only me for sure most Indonesian they ate rice as main dish menu daily. Especially for lunch i prefer to eat only rice otherwise all the day hunger always attacked me, heheheheheh. Chicken kabsa is one of popular dish from Saudi Arabia, The term Kabsa refers to any spiced and tomato-based rice, & is usually cooked with meat, chicken, shrimp, truffles or fish. This time i prepare chicken as combination, originall recipe using boneless chicken but i made from hole chicken then i cut into small pieces, believe me chicken with bones make more tasty.

11/2 kg boneless chicken pieces
1 sachet (1 x 10g) MAGGI Chicken Stock
1/2 tsp each: cumin powder, cinnamon, coriander, saffron, black pepper
4 tbsp. vegetable oil
For the rice:
4 medium onions, chopped
2 sachets (2 x 10g) MAGGI Chicken Stock
1/2 kg tomatoes, chopped
4 cups of rice, washed and strained
2 cinnamon sticks
2 dried limes
6 cardamom pods
2 green chili peppers
6 1/2 cups water

In a bowl, mix the chicken with 1 sachet of MAGGI Chicken Stock and the spices.

In a pan, heat the oil and fry the chicken pieces until golden brown. Remove and set aside.

In the same pot, fry the onions until golden brown. Then add the other 2 sachets of MAGGI Chicken Stock and tomatoes and cook for 5 minutes.

Return the chicken pieces to the pot.

Add the rice, cinnamon sticks, dried limes, cardamom pods and green chili peppers.

Add water to cover the rice and leave to cook until the rice is well done.

Turn the chicken Kabsa pot over a serving dish.

Nasi goreng sereh (lemon grass fried rice)

Galangal is common herb used on Thai food, this time i prepared fried rice with galangal and lemon leaves. U have to try ones, really simple to prepare and great taste ;)

Ingederents:
  • Cooked rice, 2 plates
  • lemon grass 1 stick, crushed the head
  • lemon leaves 2-3 pieces
  • garlic 3 cloves, crushed
  • onion 1 big size, crushed
  • red chili 5 pieces, crushed
  • salt as required
  • vegetables stock

Direction:

Heat 2 spoon oil in pan then saute garlic, onion and chili. Simmer for 1 min. Add galangal, and lemon leaves then add cooked rice. Put salt as required and vegetables stock. Mix for 10 min with medium flame. Served with onion flakes or any accompanion food.

Vegetables pulao

Saya dapat resep ini dari buku resep masakan favorite saya, makanan khas North Indian, hmmm nasi nya wangi dan enak karena bau rempahnya. Vegetables pulao sejenis biryani yg isinya cuman sayuran aja. Yang jelas bebas dr kolesterol, hehehhee...Meskipun cuman berisi sayuran, jangan tanya rasanya. Yang pasti enak selain itu gampang banget buatnya..

Bahan:
beras basmati 1 cup
air 2 cup
bawang merah besar 2 buah
cengkeh 4 butit
kayu manis 1 batang
bay leaves 2 lembar
jinten 1 tsp
garam
ghee 1 sdm
frozhen mix vegetables 1/2 cup
kembang kol 1/4 buah

  1. Bawang merah dirajang kasar, kembang kol pisahkan perkuntum kecil kecil, sisihkan
  2. Panaskan ghee dalam wajan anti lengket kemudian tumis bawang merah sampai agak harum, masukkan jintan, cengkeh, kayu manis, dan bay leaves. Biarkan sampe aroma wanginya keluar
  3. Masukkan beras kemudia tumis selama 2 min, sampe agak berubah warna, kemudian tambahkan sayuran.
  4. Tambahkan air kedalam beras dan sayuran, kemudian bubuhi garam
  5. Biarkan beras matang dan air habis.
  6. Setelah air tinggal sedikit kecilkan api kemudian tutup wajan biarkan nasi benar benar tanak dan matang, kurang lebih 10 min
  7. Sajikan hangat dengan di taburi daun ketumbar
