Fish Kudampuli



We love to eat fish, and fish always in our weekly's menu. Kudampuli was main spices used for fish curry in Kerala (south india), best thing to cook the fish on the clay pot (chatti) and kept for overnight and enjoy the fish curry in the next day. Kudampuli added the flavors and it also as the preservative. It has a sour taste.

I search on internet the advantage of kudampuli is known to treat stomach disorders and lower bad cholesterol. It is also used as a anti-obesity drug in the west. U can find easly kudampuli in any Indian shop near you ;)

Ingiderents:
king fish - 1kg
Red chilli powder - 2-3 tbsp
Turmeric powder - 1/4 tsp (i dont use)
Onions thinly sliced - 1
Ginger thinly sliced pieces - 1 tsp
Garlic thinly sliced pieces - 1/2 tsp
Salt - to taste
Kudampuli - 2-3pieces
Oil

For the seasoning
Oil - 1 tsp
Mustard seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Curry leaves - few springs


Directions:
Cut the fish filets to pieces of desired size.

Soak the kudampuli in a cup of water and keep aside.

Heat oil in a deep pan, and fry the onions till translucent. Add ginger and garlic and saute till soft.
Mix the red chilli powder and turmeric powder with a few drops of water to make a paste. Add the spice paste to the pan and fry on low heat till the oil separates.

Add salt and the soaked kudampuli pieces along with the water and bring to a boil.

Add fish pieces and cook on medium heat till the fish is cooked. Increase the heat and add water if required.

Heat oil in frying pan and add the fenugreek seeds and fry till brown. Then add the mustard seeds and when the mustard seeds start to crack, add the shallots and curry leaves and fry till brown. Pour this over the fish curry.

Serve with rice.

Mutton Korma


Still continuesly promoted to eat and cooked meat, i have left over meat on frezeer. Yups i almost forgot if i didnt check my freeze last night :D

mutton/lamb 500gr, tomato 1 big size choped, ginger ground 1/2 tsp, turmeric powder 1 tsp, chili powder 1 tsp, coriander powder 2 tsp, cinnamon stick 1 pieces, cloves 3 pieces, onion big size 1 choped, garlic 3 cloves crushed, yogurt 1/2 cup, water 1 cup, cumin seed 1/4 tsp

Clean and drain mutton keep a side. Heat oil in the pan then saute onion, garlic and ginger for 5 min, stir frequenly. Add all the seasoning until fragrant. Then add mutton and water. Covered the pan and let mutton get cooked at least for one hour, iadd salt. After mutton get cooked then add yogurt in the last, stir frequently. Serve hot with rice or paratha.

Chicken curry

This is light chicken curry because no added coconut milk, i prefer without coconut milk because free colesterol off course ;)

Recipe: Chicken curry
-Chicken 1 kg, cut into small size then clean with lemon to removed the smell
-curry leaves 10 pieces
-mustard seed
-cinnamon stick 1 pieces
-ginger 1 inch, grated
-coriender ground, 1 tsp
-curry powder 3 tsp
-cumin powder 1/2 tsp
-garlic 3 cloves, crushed
-onion big size 2, choped
-oil or butter for friying
-tomato 2 pieces, choped
-potato ( i didnt used it)
-salt
-chili powder 1 tsp
-water 4 cups
1. Melt ghee or oil in the pan then saute onion, garlic and ginger for 5 min, stirring frequenly
2. Stir in mix misture and stirring well, add tomato and saute for 2 min.
3. Add water and chicken pieces and potato, covered pan, reduce heat and simmer for 45min.
4. Just before serving add curry leaves and make the water thick and less water.
5. Served with indian rotis or warm rice

Chicken tandoori


I loved spicy and yummy chicken tandoori, we used to order from Indian restaurant. But off course iam prepared it at home sometimes. Before i dont know how to made tandoori on red colour, but one of my hubby friends told me, we should marinate chicken mix masala and add little tandoori colouring to get good colour of tandoori. Tandoori chicken served with cucumber raita and naan or rotis, hmmmmm yummy indeed :)

Mutton vindallo


Its Originaly Pakistan dish. Lamb spicy dish with yogurt. But i made some modification by adding potato and changed yogurt into tomato, hmmm yummy. Served with naan or chapati :)

1. Coriander seeds-1Tspn
2. Cumin seeds -1Tspn
3. Mustard seeds-2Tspn
4. Turmeric powder-1tspn
5. Dry red chillies-10
6. Coconut grated fresh or (dessicated)-1/3 cup
7. Fresh Ginger-Garlic paste-1tbspn
8. Oil-5Tbspn
9. Cinnamon-1 inch
10. Cloves-6 whole
11. Onions-1 Cup (finely chopped)
12. Red paprika -1 tbspn
13. Jaggery-1/2tspn
14. Water- 1cup, juice of 1 lemon
15. salt-as per taste

  1. Combine coriander, cummin, mustard, coconut, red chillies, grind it to afine powder.
  2. Add Turmeric, lime juice and half of the ginger-garlic paste & mix, wash thoroughly & then pressure cook the mutton by adding half-a-teaspoon turmeric powder for 1 whistle (mutton should be half cooked), then marinate with the paste mixture.
  3. Coat each piece well.
  4. Heat oil in a pan or kadai over medium flame.
  5. When it is heated add cloves, cinnamom & onions, fry until light brown then add ginger-garlic paste stir in for a second and then add the marinated mutton pieces to it reseving liguid, cook for 4-5mins.
  6. Mutton should be well seared.
  7. Add paparika, jaggery, salt & reserved liguid and bring the contents to boil.
  8. Cook on medium until mutton becomes tender.
  9. Serve this spicy vindaloo with Plain or Ghee rice, Pulav or Steamed Iddiappam (Indian rice noodles) or any kind of rotis or Parathas, homemade naans.

Squid masala


Iam not only depanded on one books recipe while cooked. The reason why I like browsing around to look up some recipes, and sometimes I found good recipe. Squid or calamari is yummy indeed. I love to cook different style of squid. One of my favorite is squid masala, which is spicy and another favorite is calamari rings dip into chili sauce.

Ingederents:
  • squid 1 kg, washed and clean with lemon
  • tomato 2, choped
  • curry leaves 5 pieces
  • water 1/2 cup
Seasoning
  • onion 2, choped
  • garlic 3 cloves, choped
  • chili powder 1 tsp
  • turmeric powder 1/2 tsp
  • coriander powder 1 tsp
  • garam masala 1/2 tsp
  • salt as required
  • cinnamon 1 stick
  • cloves 3 pieces
  • papper powder 1/2 tsp
Slice the squid into rings. Chop onion, garlic, and ginger. Heat a pan and saute garlic, ginger, and onion, adding salt and pepper. Add water in the pan and simmer for 5 min. Add squid, and all the seasoning powder. Bring to boil and squid cooked (at least for 20 min). let it thickner and less water.

Served hot with steam rice.

Fish mango curry



















Actually i was bit suprized raw mango its so delicious for fish curry. Because in my home country, raw mang0 used only for kind of "fruit salad". Try once to made raw mango fish curry, and u will find great amazing tasted of fish curry.

Ingederents:
  • king fish, cut into medium size and put lemon, keep aside
  • raw mango 2 pieces, sliced juliane
  • dried chili 2 pieces
  • curry leaves 10 pieces
  • ginger 1 inch, crushed
  • coconut milk 1/2 cup
  • tamarin pulp, small pieces
Seasoning
  • green chili, crushed
  • garlic, crushed
  • onion 2 medium size, sliced thinly
Extra
1 spoon of rice flour and add water

Method:

Peel the Mango and cut into small pieces. Chop the onions lengthwise. In kadai hot oil then saute onion and ginger. Add garlic and green onion.

When it starts cooking keep the flame in minimum and pour Coconut Milk. Add fish and rice flour to make it thicker.

Bring to a boil. Add the mango, chile and the remaining 10 curry leaves add tamarin pulp and salt. Gently turn each piece of fish and simmer over low heat until just cooked through, about 15 minutes. Serve immediately.

Simple fish curry



















I love this kind of fish curry, based on tamarin and chili masala, spicy and bit sour mix with tomato and onion gravy, hmmmmmmmm yummy :) Just easy and simple to prepare it, less than one hour u can enjoy delicious fish curry :)

King fish 500 gr, cut into small size
Tomato, big size cut into small size
Curry leaves 5 springs
Green Chili 4 pieces, sliced thinly
Ginger half inch, cut into juliane
Fish curry masala 2 tsp
Chili powder 1 tsp
Tamarin 1/4 inc
Onion, choped
garlic, crushed
Water 1 cup
Salt as desaired

Direction:
  1. Cut fish into small size then wash with lemon to removed bad smell, set a side
  2. Put 2 tsp oil then saute onion till brown colour, add ginger, and garlic stir for 2 min
  3. Add tomato, masala powder, chili powder, and salt fried briefly
  4. Finally add fish, green chili and tamarin, bring to boil
  5. mix very gently and make it less water and simmer on low heat for 10 min
  6. served with rice or chapati

Chicken Chili Flake


Aku namain chicken chili flake soalnya aku kasi taburan chili flake, hasilnya enakkk dan pedesnya pun kerasa banget, maklum pemakan pedes, kalo ga suka pedes boleh dikurangi cabenya yah :)

Bahan:
  • ayam tanpa tulang 1/4 kg, rebus sebentar kemudian potong dadu
  • jagung muda, potong serong/ memanjang
  • brokoli, potong perkuntum
Bumbu:
  • bawang putih 3 buah, keprek
  • jahe 1/4 iris, rajang kasar
  • bawang bombay 1/2 buah, rajang kasar
  • merica 1 tsp
  • garam
  • chili flake 1 sendok
  • kecap manis 1 sendok
  • penyedap rasa (jika suka)
Cara memasak:
  1. Panaskan minyak sedikit kemudian tumis bawang merah dan bawang bombay sampe harum, masukkan jahe
  2. Tumis ayam yg telah dipotong dadu, beri sedikit air kaldunya
  3. Biarkan airnya agak matang kemudian masukkan sayurannya
  4. Tambahkan garam, merica, kecap dan bumbu penyedap
  5. Masak sampe sayuran setengah matang
  6. terakhir baru masukan chili flakes dan aduk sebentar
  7. Sajikan dengan nasi panas
Note: chili flakes adalah cabe kering yg telah di gerus kasar, kalo ga ada bisa pake cabe bubuk
