Vegetables pulao

One of our choice if we were obstaining eating meat, very simple to prepare and rich in flavour :) Its famous dish from North Indian, was enough to enjoyed with yogurt raiata and papadam without accompanied with other side dish ;)

1 cup uncooked Rice
1 Onion (chopped)
1 tsp Ginger garlic paste
1 black Cardamom (coarsely ground)
2 Cloves
1 Cinnamon stick (small)
5 whole Black Pepper
1 Bay leaf
1 tsp Cumin seeds
1/2 tsp Red chilli powder
Mix Vegetables (carrot, beans, cauliflower, etc) i used frozhen
1½ tsp garam Masala powder
salt to taste
oil or ghee


Wash and soak rice for 15-20 minutes.
Heat oil in a cooker. Add cumin seeds, cinnamon stick and bay leaf. When it starts to crackle then add black cardamom, cloves and black pepper. Cook for 20 seconds.
Add chopped onion and ginger garlic paste and fry for couple of minutes or till light brown.
Add the cut vegetables
Add garam masala powder and red chilli powder. Mix well and cook for 2 minutes(little water can be added if required)
Add drained rice and fry for 2 minutes. Add water and salt. Mix well and close the lid of the cooker.
Cook till done.
serve hot with yogurt raita and papadam

  2. Instead of rice, I bet that this recipe would also be good with chana dal that is partially chopped with a processing wand after being cooked.
