Back to my childhood, combro was my favorite snack. Its Indonesian tradisional snack, made from granted cassava with "tempeh" stuffed. In my home town, u can find "combro" very easy, along the road side, there are man selling any fried snack items, and its quiet cheap also. Here is quit chilly now, and "combro" is best accompanies for "snack" in tea times :)
cassava/ tapioca 1/2 kg
tempeh 100 gr, choped
garlic 2 cloves, crushed
chili paste 1 tsp
bay leaves 1 pieces
salt and sugar to taste
oil for fry
- Place cassava in food processor make it puree, set aside
- Heat oil in pan then saute garlic for one min, add choped tempe, then add bay leaves, bit sugar and salt. Let it cook for 5 min, set aside
- Add salt to cassave puree, then mix by your hand
- Take 2 spoon cassava and put in your hand. add tempeh ingiderents on the edge then make fold it make oval shapes. Continue till puree cassava finish
- Deep fried until browned colour in low flame

Minggu lalu saya kepingin banget buat combro tapi malas beli cassava segar krn ketemu yg sudah diparut halus. Bisa pakai itu tidak ya? Trus, di blog org lain kok resepnya juga pakai kelapa parut segala. Dan satu pertanyaan lagi nih, gorengnya musti pake api kecil supaya tidak meledus ya? Thanks ya.
